Gluten-Free Homemade Bread
Ingredients:
3 tbsp ground flaxseeds + 1/2 cup water
1/2 cup unsweetened applesauce
3 tbsp maple syrup
1 3/4 cups water
3 cups gluten-free oat flour
3/4 cup millet flour
1 1/2 cups tapioca starch
1 1/2 tbsp baking powder
Directions
Preheat oven to 350F. Line a loaf pan with parchment paper.
Mix together the ground flaxseeds and water. Set aside for 5 minutes, until thickened. Add to a medium-sized mixing bowl together with the applesauce, maple syrup, and water. Whisk until uniform.
Add the oat flour, millet flour, tapioca starch, and baking powder to the wet ingredients and stir until evenly mixed. Set aside for 15 minutes for the batter to expand.
Pour the batter into a loaf pan, being careful not to lose any of the air bubbles that have formed in the batter. Bake for 50-60 minutes, until a toothpick inserted comes out clean.
Remove from oven and carefully tip out of the loaf pan right away. Remove the parchment paper and place on a wire rack until it has completely cooled. Slice and serve.
Egg-Free Homemade Mayo

½ cup warm filtered water
¼ cup extra-virgin olive oil
3-4 cloves garlic
¼ teaspoon unrefined salt

Let cool for an hour at room temperature – alternately, you can place it in the refrigerator for 20 minutes.
If you would like to use the sauce in a cold dish, thin with water until the desired consistency is reached. Enjoy this easy homemade mayo!
Put it all together!
Spread the mayo on the bread and add some fresh chopped basil on top (optional), slice up garden-grown tomato, sprinkle a little pink Himalayan salt and pepper on tomato (optional)and enjoy one of summer's most favorite sandwiches.
Let's Talk Health
Some of this recipe's superstars
Tomatoes - Contain their own variety of vitamin C that's bioavailable in the lymphatic system and liver. This vitamin C also does wonders for our thyroid - helping to support its own immune system. I love growing my own in my garden every year! They are very easy to keep up with and not only do they flourish in the sun, but they also soak up the moonlight to help them grow - which also helps to bring balance within your body.
Basil - This herb packs a powerful antiviral punch with it. The phytochemical compounds can enter into the system to slow down viruses - especially Epstein Barr. Basil also help reduce nodules, cysts and tumors.
Coconut Butter - Another strong antiviral and also anti-inflammatory. Coconut also supports our central nervous system from exposure to various toxins and viruses. Not to mention our brain health too!
Garlic - Bringing in another kick with its antiviral and anti-inflammatory properties, plus more! Garlic helps to kill of strep, bacteria from UTI's and sinus infections to name a couple. It can help flush any toxic viral and bacterial waste out of the body.
