Garden Tomato, Basil & Homemade Mayo Sandwich

Have you had summer's ultimate sandwich yet? It's a favorite of mine - especially to pack up and bring to the beach! Or when I need something quick to munch on while writing outside.


Switch out the store bought mayo and bread and give this homemade alternative a try!

Gluten-Free Homemade Bread


Ingredients:

  • 3 tbsp ground flaxseeds + 1/2 cup water

  • 1/2 cup unsweetened applesauce

  • 3 tbsp maple syrup

  • 1 3/4 cups water

  • 3 cups gluten-free oat flour

  • 3/4 cup millet flour

  • 1 1/2 cups tapioca starch

  • 1 1/2 tbsp baking powder

Directions

  • Preheat oven to 350F. Line a loaf pan with parchment paper.

  • Mix together the ground flaxseeds and water. Set aside for 5 minutes, until thickened. Add to a medium-sized mixing bowl together with the applesauce, maple syrup, and water. Whisk until uniform.

  • Add the oat flour, millet flour, tapioca starch, and baking powder to the wet ingredients and stir until evenly mixed. Set aside for 15 minutes for the batter to expand.

  • Pour the batter into a loaf pan, being careful not to lose any of the air bubbles that have formed in the batter. Bake for 50-60 minutes, until a toothpick inserted comes out clean.

Remove from oven and carefully tip out of the loaf pan right away. Remove the parchment paper and place on a wire rack until it has completely cooled. Slice and serve.

Egg-Free Homemade Mayo


Ingredients (can swap the coconut butter with eggs if desired)

  • ½ cup coconut butter

  • ½ cup warm filtered water

  • ¼ cup extra-virgin olive oil

  • 3-4 cloves garlic

  • ¼ teaspoon unrefined salt

Directions

  • Place the coconut butter, warm water, olive oil, garlic cloves and salt in a blender and blend on high for a minute or two, until the sauce thickens.

  • Let cool for an hour at room temperature – alternately, you can place it in the refrigerator for 20 minutes.

  • If you would like to use the sauce in a cold dish, thin with water until the desired consistency is reached. Enjoy this easy homemade mayo!

Put it all together!

Spread the mayo on the bread and add some fresh chopped basil on top (optional), slice up garden-grown tomato, sprinkle a little pink Himalayan salt and pepper on tomato (optional)and enjoy one of summer's most favorite sandwiches.
