Delicious and Healthy: How to Make an Easy to Digest Potato Salad
This easy to digest potato salad is a win for me, especially when I need to fuel up before a writing session. In the summer months, you can trade in the traditional style potato salad with this version to give some variety.

Potato Salad
Ingredients
2 pounds potatoes, peeled and diced
1 garlic clove, minced
1/4 cup roughly chopped fresh parsley
2 tablespoons finely chopped green onion
1/2 teaspoon mustard powder
2 teaspoons fresh lemon juice
1/2 cup thinly sliced radish
Optional Additions
1/2 cup thinly sliced cucumber
1/2 cup chopped asparagus, steamed or raw
Directions
Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket.
Place the potatoes in the basket, cover, and steam for 5 to 10 minutes, until tender. Remove and place in a bowl.
Add the radishes, garlic, parsley, green onion, mustard powder, and lemon juice. Mix well.
Add any additions you would like and if preferred, can replace parsley with another herb of choice.
