What is Kuzu?
Kuzu is a plant, originally from Japan. The white root is made into a powder that dissolves in cold water and becomes thick in hot water. It has no bitter or sweet aftertaste, alkalinizes, soothes and restores overall health - particularly when ill with a cold.
This white gold is used by Eastern healers for almost 2,000 years. It's known for its ability to calm digestive disturbances and ease the nerves—helping you sleep better. Kuzu is also noted for its high flavonoid composition and is for its ability to treat a variety of health concerns.
Ingredients
1 pint chocolate amazake (this is just a a naturally sweet rice beverage sold in many natural health and food stores like Whole Foods)
1 teaspoon vanilla extract
1/4 cup chopped almonds
Roughly 15 cherries, chopped and seeded
1 tablespoon kuzu root mixed with 1/4 cup water
Directions
Heat amazake to just under boiling, lower heat
Add vanilla and stir in kuzu root. The amazake should thicken to a consistency of pudding.
Pour into small cups or bowl
Chill in fridge for at least 30 minutes
Remove from fridge and sprinkle chopped almonds and cherries in each serving.
